Food is love... and a recipe for "Goldie's Snow-day Chili"



One of my favorite ways to show love is by making nourishing, yummy foods that people keep coming back for more.



I grew up on an orchard in Washington State, where my grandmothers taught me how to bake breads, pies and pastries. Each summer I'd find myself elbow-deep in the kitchen, canning sweet and sour cherries, fuzzy peaches and heavenly nectarines. Then my aunties would show up with huckleberries from the mountains and we'd have biscuits with fresh jams and cobbler for Sunday dinner... and breakfast on Monday too!



This weekend I'm taking it easy, and my friend Goldie is nurturing me with healthy comfort food high in iron, vitamin A, fiber, protein. There was supposed to be a windstorm... so if there is, come to our place. We're well prepared.



Here's what's on the menu:



Goldie's Snow-day Chili




  1. tbsp olive in a skillet. heat on med.
    add 5-6 cloves chopped garlic and 1/2 onion sliced thin. sautee.
    fill pan with chopped green.
    add a big can of diced tomatoes.
    let it cook down for 20 minutes.
    Fry spicy italian chicken sausage and add it to the stew.
    Add a can of black beans.
    squeeze in half a small lemon. add salt and pepper to taste.
    cook for another 20 minutes while you make grits and bean dip.
    Serve over grits.



Cheesy Polenta



(mmmm...)



Cook polenta according to package directions.
add diced or grated cheese to taste.



and Creamy Bean Dip



(inexpensive, and serves well hot or at room temperature)



Pour 1 can of spicy chili beans in a skillet and heat on med. high.
add 1 block of cream cheese.
and salsa to taste.
slice an avocado if there's one handy.



serve with tortilla chips.
